Veggies on Skewers

So in one of our diet dinner diet nights we had to eat only veggies boiled or grilled “no potatoes or beans”, so i wanted to go a little creative plus we were sick of eating bland food, i just had to do something to enhance the taste, so this is what i did.

Ingredients:

– Mushrooms

– Eggplant “peeled and cut in cubes”

– Cherry tomatoes

– 2 Tbsp of olive oil

– 3 garlic cloves

– 1 Tbsp Oregano

– 2 tsp salt

Preparation:

1. First you need to make your marinade, like i marinade meat i will marinade the veggies, so you place in a blender olive oil, garlic, oregano and salt

2. Then you mix it in your veggies and you leave them to marinade for about 30-45min

3. Place your veggies on skewers and start grilling them, now if you have an outdoor grill they would taste 10 times.

That’s it, of course you can use any veggie you like to grill, and you can get even more creative with the marinade, but because i don’t have much to choose from, even the 2 Tbsp of olive oil was a little cheating lol yes that’s how tough this crazy diet is! but it’s a good challenge!
